We’re not suits. We’re not consultants with clipboards and no calluses.

We’re restaurant people — lifers — who know what it’s like to be in the weeds and still give a damn.

We move fast, solve problems, and build things that actually work.

From wild ideas to full-blown concepts, we bring bars and restaurants to life with hustle, instinct, and a little chaos magic.

Our Story

On The Fly Hospitality was started by five brothers from Toledo, Ohio — raised on backyard cookouts, packed dining rooms, and a deep love for feeding people.

We didn’t come from money or Michelin stars — we came from hard work, hot kitchens, and the belief that good food and great hospitality can change a person’s whole damn day.

We built this thing the way we built everything: on the fly. No rulebook, just gut instinct, hustle, and heart.  Figuring it out as we went. Backed by instinct, grit, and more than a few late-night laughs over shift meals and cold beers.

On The Fly isn’t just a name — it’s how we live, how we work, and how we keep growing.

And at the center of it all? Good food. Great people. And a hell of a time.
